A great sandwich.

  • 2 thin steaks (top sirloin)
  • 1 onion
  • 2 eggs
  • 2 rolls


  1. Chop onion into half-moons.

  2. In a nonstick skillet, place one tablespoon of oil and heat over medium-high heat. Add the onion and cook for about 10 minutes until cooked and lightly golden—season with salt and pepper. Stir occasionally. Remove to a plate, and keep warm.
  3. Season the steaks.
  4. In the same skillet, heat oil over high heat and cook the steak seared, about 2 minutes per side. Remove to a plate and keep warm.

  5. Toast the bread open.
  6. Make the eggs sunny-side-up.

  7. Assemble the sandwich by placing the bottom half of the bread, meat, and onion and finish with a fried egg, close with the other half and serve immediately.
