Chilean Pollo con champiñones Chicken with mushrooms

Ingredients

Units
  • 1 tray of mushrooms or 2 cups sliced mushrooms
  • 6 chicken thighs or drumsticks with skin
  • 1 medium onion diced small
  • 1 cup white wine
  • 1 tablespoon butter
  • 1 tablespoon oil
  • 1 dried bay leaf
  • salt and pepper
  • chopped parsley to garnish

Instructions

  1. Heat the butter and oil over medium heat in a wide pan or pot. Add the mushrooms and saute occasionally, stirring for 3 minutes. Remove to a plate.

  2. Add the onion and cook, stirring for 5 minutes. Meanwhile, pat the chicken dry using a paper towel and generously season with salt and pepper on both sides.

  3. Increase the heat to medium-high. Add the chicken and sear for 3-5 minutes per side.

  4. Add white wine and bay leaf. Lower heat to medium, cover. Cook for 15 minutes.

  5. Uncover, add the mushrooms and chopped parsley. Serve warm.
