Braised Celery and Kolhrabi

Much of my days revolve around community gardens, every Tuesday, I work with a group of volunteers in a community garden where we grow food for donation to a food bank. I also manage my kid's school garden, and two weeks ago, I decided to take on the garden at my youngest kid's daycare. I love growing vegetables and educating children. This year, I have set myself to eat more locally grown vegetables. I used to buy the same old ones: celery, carrots, cabbage, etc. without paying much attention where they have been grown. Now I'm getting a local CSA box.

Braised celery and kohlrabi

Ingredients:

  • 4 stalks celery, cut into sticks
  • 3-4 kohlrabi peeled and cut into sticks
  • 2 tablespoons butter
  • 1 cup vegetable broth
  • salt and pepper
  • thyme or oregano to serve

Preparation:

  1. In a medium skillet with a lid place one tablespoon butter, celery and chopped kohlrabi and vegetable stock, season with salt and pepper. Cover and cook over medium-high heat for 15 minutes, stirring a few times.
  2. Taste, vegetables should be cooked, adjust the seasoning, and turn off the heat. Add the remaining butter and allow to melt, stir gently.
  3. Serve warm, with herbs sprinkled on top. It is delicious with rice.
