Pizza on the Grill

Pizza paso a pasoMy husband is the master baker of the house, so the pizzas fall under its jurisdiction and he always shines, when the weather is nice in Houston, he makes them on the grill. Our grill is gas burning, so it is easier to control the heat. ?Anyway, I leave in the recipe instructions to make it in the oven too. Grilled pizzas, like everything, takes practice.

Pizza on the grill

( for 2 medium pizzas)
Ingredients:

  • 1 ?1/ 4 cup warm water ( 43 degrees C )
  • 10 grams of dry yeast granules (2 ?¼ teaspoon )
  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • 4 cups all-purpose flour
  • 2 teaspoons coarse salt or ?1 ?1/ 2 teaspoon fine salt

Preparation:

  1. Combine the water, yeast, honey and olive oil in a small bowl, mix well with a wooden spoon, stir vigorously.
  2. Place in the mixer with the kneading attachment, add 3 cups of flour, salt and knead on medium-low speed. While kneading incorporate the remaining cup of flour, you need to get a soft dough that does not stick to the sides of the bowl. Or perform the same procedure by hand, mixing vigorously with the spoon in the bowl and when it acquires a texture of dough continue kneading on a floured counter.
  3. Knead on medium speed for 10 minutes, or until smooth. Or by hand on the counter, about 15 minutes. After 10 /15 minutes, transfer the dough to a floured counter and knead by hand a dozen times more. It should feel smooth and elastic. Put the dough in a large bowl oiled, turn the dough so that it is well coated with oil. Let stand covered with a damp cloth for 30 minutes.
  4. Heat oven to maximum temperature: 250 C or 500F. The same for the grill.
  5. Separate dough into 2 equal parts. Knead each lightly and form 2 balls.
  6. Roll the dough giving it the desired shape as round or rectangular. Leave rest in the baking pan for 10 minutes. Or shape by hand as seen in the pictures, press with your palm and then use the knuckles to go spreading the dough when the dough starts to resist, let it rest on the counter 5 minutes and continue.
  7. If you were to make a white pizza brush with olive oil and bake for 3-4 minutes until lightly browned. Put fillings and return to oven until cheese melts. Or place the tomato sauce over the raw dough and bake for 3-4 minutes, add the remaining ingredients and bake until cheese melts. Serve.
  8. On the grill, brush the dough with olive oil and place on grill, bake a minute or until it is released, if it stuck patience, once cooked it will separate from the grill, rotate it 90 degrees and cook for 1 minute more. Flip with tongs, fill and cook until cheese is melted and pizza is ready. I recommend not putting many toppings because it will take too long and you can burn the dough.
