Beet Hummus

Ingredients:

  • 3 cooked and peeled beets, cold
  • ⅔ cup cooked chickpeas
  • 2 cloves garlic, finely chopped
  • 6 tablespoons tahini (sesame paste in supermarkets)
  • juice of ½ lemon
  • salt
  • splash of balsamic vinegar

Preparation:

  1. Place everything in the food processor and process until smooth and homogeneous.
  2. Test, adjust the seasoning.
  3. Serve with vegetable sticks or crackers or pita chips.

    The recipe is indeed fantastic. The original recipe though called for 12 oz. beets, 1/4 cup lemon juice, pinch of cayenne pepper and pomegranate molasses (which makes the recipe).
