This recipe of Cilantro Mayonnaise was born by chance.
I had cilantro (we are caring for a friend’s bunny and the bunny loves cilantro). I had 2 yolks left over from another recipe and wanted to make special sandwiches for a lunch with a dear friend. I used it in a panini with tomato and mozzarella. Cilantro Mayonnaise to the rescue!
I would love to have it with french fries or roasted potatoes. The color of this Cilantro Mayonnaise is beautiful. If you have just a little left use it as a based for a dressing for salads.
Keep refrigerated. Remember that cilantro is very easy to grow at home during the cold months, but in summer will bolt.

Cilantro Mayonnaise
Ingredients:
- 2 yolks
- 1/4 cup cilantro leaves, pressed tight
- 1/4 cup olive oil
- 1 clove of garlic
- salt and pepper
Preparation:
- Place in blender or food processor the yolks, cilantro, chopped garlic, salt, and pepper.
- Process for 5 seconds and start adding the olive oil in a continuous thread until fully incorporate and looks like a thick mayonnaise.
- Keep refrigerated until ready to use. No more than 3 days.
