Everything improves with Dulce de leche. This Dulce de leche rice pudding proves this idea right again. Its creamy texture, sweetness, and richness make it a genuinely comforting dessert. You can enjoy it warm in winter and cold in summer.

Dulce de Leche Rice Pudding

Arroz con leche, or rice pudding, is a cherished dessert staple across Latin America, Spain, and beyond. Each spoonful is a nostalgic embrace, offering creamy sweetness with hints of cinnamon and vanilla. It’s not just a dessert—it’s a story passed down through generations, with every family putting their spin on it. Being dulce de leche, the magical flavor of my childhood in Chile, makes sense to bring both together in this version.

One of my favorite snacks was a Dulce de leche sandwich. We have them so frequently that it is genuinely the PB&J equivalent.

Serving Suggestions for Dulce de leche rice pudding:

  • Drizzle additional dulce de leche on top.
  • Sprinkle with cinnamon or a few toasted nuts for crunch.
  • Pair with fresh fruit like bananas or strawberries for contrast.

Description

A delicious twist on the beloved rice pudding.


Ingredients

Units
  • 1 cup of water
  • 2 cinnamon sticks
  • 1 cup white rice (you can use quick ones)
  • 4 cups 2% milk or whole milk
  • 1 can (380 grams or 13.4 oz.) of Dulce de Leche (available in Latino markets or the International aisle)
  • 1 tablespoon butter
  • salt

Instructions

  1. Cook the rice following your favorite method. Add a cinnamon stick to the cooking water and a pinch of salt.

  2. Place the milk and Dulce de Leche in a saucepan and heat over medium-high heat, stirring to dissolve the Dulce de Leche.

  3. Add the cooked rice and continue to cook over medium-low heat for 20-30 minutes, stirring frequently.

  4. Be careful. When the milk reaches boiling, it produces a lot of foam. Reduce the heat to a simmer.
  5. Wait until you reach the desired thickness. In my case, it took 24 minutes. Add the butter and turn off the heat.

  6. Remember: it will thicken when it is cold.
  7. Serve cold or warm with chocolate sprinkles, raisins, or just by itself.

    We eat a lot of rice in our house, in lots of different ways, but my current favorite is fried rice, with leftover chicken and veggies. Sometimes I roast a chicken just to get the leftover meat to make the fried rice!
