Israeli Couscous Salad with Black Beans and Mango

for 2 people
Ingredients:

  • 115 grams couscous
  • ½ mango cubed
  • ½ cup of cooked black beans or from a can, rinse and drain
  • 5 scallions chopped fine
  • ¼ orange/red pepper cut into small cubes
  • salt, pepper, white wine vinegar, olive oil

Preparation:

  1. Cook the couscous according to the instructions on the box. Meanwhile wash and chop the mango, scallions, and pepper.
  2. In a bowl mix all ingredients and season with salt, pepper, white wine vinegar and olive oil to taste.
