Pasta de Palmitos -Hearts of Palm Egg Salad Canapés are a must at the end-of-year celebrations in Chile, especially for  New Year. My family always had canapés and sweet treats to toast the New Year. One of our favorites is made with this Pasta de Palmitos -Hearts of Palm Egg Salad.

This spread with hearts of palm and eggs is rich and easy to make. This spread can be made without eggs, using cream cheese, palm hearts, or chives. You could easily use it on finger sandwiches. Remember always to keep it refrigerated.

Another everyday use of this spread in Chile is filling a ham roll on top of half an avocado. Both are standard first courses in Chile.

Description

Try this egg salad. It is delicious.


Ingredients

Units
  • 4 hard-boiled eggs
  • 1 can (400 grams) of palm hearts
  • ½ cup mayonnaise
  • chopped chives
  • salt

Instructions

  1. Mash the hard-boiled eggs with a fork.
    Mash hard boiled egg
  2. Finely chop the palm hearts, but do not puree them in the food processor.
  3. Mix everything and season well.
  4. Fill cocktail bread with the mixture or place it on bread cut into circles, as shown in the picture.
