Easy Pisco Sour

Pisco sour is THE drink in Chile; it is the drink of choice both in restaurants and at family gatherings. This is the recipe we prepare at home: easy and delicious.

Pisco Sour was invented in Lima, Peru. And became popular in Chile many decades ago.

Here in the USA, it is increasingly easy to find pisco at liquor stores, and if you live in Texas, I recommend going to Spec’s. I love the variety of spirits and wines they offer.

This recipe is a batch version of the traditional drink. It’s essential for all the ingredients to be chill in advance, except the egg white. You can use pasteurized egg whites if that is a health concern, or leave it out. You will be missing the frothy top, but the flavor is still excellent.

This time we shared it with American friends who had never tried it and oh, boy, did they like it, remember to drink in moderation.

Ingredients

Scale
  • 1 cup of lemon juice or lime juice
  • 1 cup of pisco
  • 1 cup simple syrup (1 cup sugar + 1 cup water, cook until sugar dissolves and cool after)
  • 1 cup ice
  • 1 egg white
  • bitter Angostura to serve

Instructions

  1. Put it all together in the blender. Mix until everything comes together and is frothy.
  2. Serve immediately with a few drops of bitter.

A Despacito cocktail for Hispanic Heritage Month

There are not many drinks beyond the traditional Chilean on the blog. Today we begin to correct the course.

Kroger invited me to welcome Hispanic Heritage Month, and I happily accepted. Hispanic Heritage Month is celebrated, in the USA, from September 15 to October 15 with activities in schools, libraries, and community centers. If your children are learning Spanish, it is an excellent month to participate in these activities.

It is also an opportunity to celebrate with family and friends; opening our houses to share our culture and traditions. The most natural way for me to do it is to invite friends to eat our traditional food. With my grocery list in hand, I go to Kroger.

At Kroger, I always find everything I need: ingredients, beautiful things for my table like fresh flowers and paper napkins, and new products for appetizers and desserts. I especially recommend their brands. My favorite is Simple Truth, the organic line since their products always have excellent quality and superb prices. I’m a fan of cocktails; I prefer them to a beer or a glass of wine to accompany my dinner. I love how a well-made cocktail can be complex and tell a story. And fortunately one of my best friends is an expert at making them. So to honor my Hispanic heritage, I challenged her to develop a cocktail with tequila and coffee. In Chile, coffee has always been a favorite flavor in ice cream, desserts, and drinks, from Café Helado to Cola de mono (Chilean version of the eggnog).
Let’s hear from the expert.

Hola! The best part about cocktails, in my opinion, is the way they bring people together. Like food, they allow us to explore exciting flavor combinations that can evoke memories or bring new surprises. Experimenting with them and drinking them with friends brings me joy. When I was invited to celebrate Hispanic Heritage Month, I was thrilled.

This collaboration was as challenging as it was fun and delicious! Starting with a solid 100% blue agave tequila like Jose Cuervo Especial was vital. The Simple Truth Organic Colombian Dark Roast Cold Brew is so delicious that it can be enjoyed by itself! Though I knew tequila and coffee go together well, I was excited to learn that Cointreau is also a common liqueur in Hispanic homes.

The sweet orange flavors would balance out the sharp bitterness of the Colombian cold brew coffee. Perhaps one of my favorite finds at Kroger was the Simple Truth Organic honey packets. This is a dream for mixologists! It dissolves quickly in cold or hot liquids and gives a rich honey flavor without adding the thick viscosity that agave nectar would. It added just the right amount of sweetness, and we didn’t even have to shake the ingredients to blend!

Ancho Reyes is a chili liqueur made from poblano peppers in Mexico. It has a delightfully spicy and slightly smoky flavor that added just the right amount of complexity to this cocktail. Could the cocktail be done without the addition of this ingredient? Absolutely. But since it is widely available now, I recommend it!

Cinnamon naturally played well with the other flavors in this cocktail, so we used it to mix with the ingredients, as well as a garnish. This is a fun trick – it is so easy and yet really impressive when you serve guests a drink with a cinnamon stick still smoking. Just hold a cinnamon stick over a gas burner, and besides garnishing your drinks, your kitchen will smell amazing! It’s a win-win!

Despacito – a drink to sip slowly while enjoying the company of your friends!

Ingredients for 3 servings:

  • 4 1/2 ounces (135 ml) Simple Truth® Cold Brew Coffee Colombian Dark Roast
  • 4 1/2 ounces (135 ml) of José Cuervo Especial Tequila
  • 1 1/2 ounces (45 ml) Cointreau or orange liqueur
  • 3/4 ounces (20 ml) Ancho Reyes, optional
  • 1 package of Simple Truth® Honey Crystals
  • Cinnamon sticks to serve

Preparation:

Pour all ingredients in a mixing glass, along with a smoked cinnamon stick and stir with ice to chill and dilute the drink. Strain into old-fashioned glasses over a large clear ice cube. Garnish with a smoking cinnamon stick.

The Despacito is a drink to enjoy slowly with dinner. I recommend drinking it along with a meat dish, especially pork and grilled vegetables.

Chilean Coffee Eggnog (Cola de Mono)

Chilean Coffee EggnogWith December started, is time to start the Holiday recipes.
We start with a very traditional drink in Chile: Chilean Coffee Eggnog or Cola de mono, literally monkey’s tail, is almost the same as Eggnog, but with the addition of coffee. This version has very little liquor as I like, you can always add more to taste.
We tested it with bourbon, rum, tequila and vodka for those who can not get Pisco. The closest thing is with vodka. Here in Houston, Spec and most liquor stores carry Pisco.

Description

The classic Chilean drink for the holidays.


Ingredients

Scale
  • 1 liter of milk
  • 300 ml of pisco or another brandy, in USA (vodka)
  • 2 yolks
  • 3 cloves
  • 1 cinnamon stick about 6cm long
  • 3 tablespoons instant coffee (Nescafé Colombian)
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla

Instructions

  1. In a medium saucepan place the milk, cloves, and cinnamon.
  2. Heat on medium-high. Keep an eye on, because milk can boil and overflow easily.
  3. When milk is warm, take 1/2 cup and dissolve the coffee in it, return everything to the pot and continue heating and stirring occasionally.
  4. In a medium bowl beat the egg yolks with the sugar until combined well, a minute with a fork.
  5. Once the milk star boiling, lower the heat to a minimum and get 1/2 cup of boiling milk and keep adding to the yolk mixture always whisking, repeat with 2-3 1/2 cup of milk.
  6. Return everything to the pot and continue heating and stirring until thickened. Increase heat to medium. About 5 minutes.
  7. Cool and add vanilla and liqueur.
  8. Taste and adjust the sugar and liqueur to taste.
  9. Bottle and kept refrigerated for up to 10-12 days.

Strawberry Red Wine Punch

A classic summer drink in Chile, burgundy or “borgoña” is any punch with fruit and red wine. The most popular one is with strawberries and peaches and this Strawberry Red Wine Punch.

The truth is it’s impossible not to take advantage of the incredible summer fruits in Chile, juicy and with a sweetness that I have rarely found anywhere else. These wine-based punch are delicious and are frequently enjoyed with Sunday lunch.

Fruit is very cheap in Chile, and a lot of people have access to fruit trees in backyards. I grew up in a house with avocados, cherries, peaches, walnuts and apricots trees… so spoiled!

Description

A refreshing drink for hot summer afternoons.


Ingredients

Scale
  • 1 bottle red wine
  • 1 box of strawberries
  • 2 medium ripe peaches, optional
  • sugar to taste
  • 2 tablespoons Cointreau or other liquor

Instructions

  1. Peel the peaches and cut them into small pieces. Save the juices.
  2. Add the washed and chopped strawberries. Mix fruit and sugar (start with 2 tablespoons) before adding the wine.
  3. Add the wine and Cointreau, stir and refrigerate for at least 2 hours, can be up to 6 hours.
  4. Serve over ice.

Rosemary Pisco Sour

In late August, we were invited to do a cooking class at one of the most important food fairs in Santiago, Chile. Polin, Claudia, and Barbara were cooking live and since I could not travel at that time I made this video recipe and sent it pre-recorded.

I chose to make rosemary pisco sour and I was impressed at how good it tasted. Since then I’ve been testing infusing pisco with other herbs like lemon verbena, basil, and mint.

Pisco sour is usually enjoyed before lunch or dinner at restaurants in Chile, it’s the most traditional aperitif. Always serve cold.

Pisco is distilled from grapes and available in liquor stores.

Rosemary Pisco Sour

To infuse the pisco

  • 1/2 cup pisco
  • 5 sprigs of rosemary

Place the pisco and the washed and dried rosemary sprigs in a jar. Let it sit on the kitchen counter for at least three days and up to 1 month.

For the simple syrup

  • 1 cup water
  • 1 cup of sugar

Heat the water and sugar in a small saucepan, stirring until sugar dissolves. Cool and store in a jar in the refrigerator for up to 1 month.

For the pisco sour (2 servings)

  • 1/4 cup simple sugar syrup
  • 1/4 cup lemon juice or lime pica
  • 1/4 cup flavored with rosemary or lemon verbena pisco
  • 1/4 cup ice
  • 1 tablespoon egg white
  • Angostura bitters

Put everything in the blender, except for the bitters, or in a large jar where you can use the hand mixer. Process until all the ice is completely incorporated.

Serve immediately, adding a few shots of bitter and celebrate.

Fanshop Chilean Drink

Fanshop, Chilean DrinkFanshop is the perfect drink for this long, hopefully, lazy and restful 4th of July weekend.

I used to don’t like beer, I’ve never drunk a whole one, but when it’s hot a Fanshop is always welcome, and summer is super hot in Houston. For this recipe, my husband recommends using a good lager.

I recommend using cold glasses. A few minutes in the freezer and they will be ready. A Fanshop, in my opinion, is more than the addition of the 2 products. I love that there are fewer bubbles and how smooth and sweet it is. Perfect for weekend evenings in summer with a barbecue and time to read and relax.

Of course, you can use any kind of beer that you like, but in general, I wouldn’t recommend using a craft beer, the flavor will be lost.

If you are looking for a brewery to visit in Houston, I recommend City Acre Brewing, on the northside, away from the traffic and with great food and beers.
